Chicken Tikka Sandwich

The kids are always looking for new things in their lunchboxes and these chicken tikka sandwiches are so popular. They share with their friends and their mums call and ask for the recipe. Look no further, I’m about to share it with all of you. Serve with crisps, chips and coleslaw.





Preparation Time 5 minutes

Marination Time 1 hour

Cook Time 15 minutes

Serves 4


Ingredients

250 grams chicken breasts- cubed

1/2 teaspoon salt

1/2 teaspoon chilli powder

1/4 teaspoon turmeric powder

1/4 teaspoon garam masala powder

1/4 teaspoon cumin powder

1/4 teaspoon black pepper

1/2 teaspoon garlic paste

1/2 teaspoon ginger paste

1 teaspoon lemon juice

1 teaspoon oil



Coleslaw


1/2 cup cabbage- shredded

1/2 cup carrot- grated

1/4 cup capsicum- thinly sliced

1/4 teaspoon Salt

1/4 teaspoon black Pepper

1/4 teaspoon sugar

1/2 teaspoon vinegar

1/2 cup mayonnaise


Slices of bread

Butter

Lettuce -to serve










Instructions

  1. Marinate chicken in the salt, chilli powder, turmeric powder, garam masala powder, cumin powder, black pepper powder, garlic and ginger paste, lemon juice and oil. Marinate for 1 hour.

  2. Make the coleslaw. Combine the mayonnaise, salt, pepper, sugar and vinegar in a bowl. Mix well. Add the cabbage, carrot and capsicum. Mix well and chill until ready to use

  3. Fry the chicken in 1 teaspoon oil, until golden and crispy. Bring to room temperature.

  4. Spread mayonnaise on bread.

  5. For the club sandwich, top with chicken, coleslaw and cheese. Top with another slice of bread and cut diagonally into triangles.

  6. For the grilled chicken tikka sandwiches: place cheese and chicken on the bread. Top with another slice of bread and grill on a medium heat until the bread is crispy and golden and the cheese is melted in the middle.

  7. Serve with chips, fries and coleslaw.
