Chicken Nachos

The weekend means MOVIE NIGHT! And snacks are a MUST! We love our movies and snacks. I always want to try new snacks. There was an offer on tortilla chips at the supermarket, so I decided to go with nachos. But why boring and ordinary nachos and salsa, when you can do so much better.

Serves 4


Ingredients


1 1/2 cups shredded chicken

1 tablespoon oil

1/2 teaspoon garlic powder

1/2 teaspoon cumin powder

1/2 teaspoon paprika

1/2 teaspoon oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

200 grams tortillas chips

2 cups shredded cheese- divided

1 cup beans -drained



Toppings


1/2 cup salsa/ 1 diced tomato

2 tablespoons black olives- sliced

1 jalapeno- sliced

1/4 cup sour cream

1 tablespoon fresh coriander- chopped





Instructions

  1. Preheat the oven to 200c.

  2. Combine the chicken, oil, garlic powder, cumin powder, paprika, oregano, salt and pepper. Mix well and set it aside.

  3. In an oven proof dish, place half the Chips in a single layer. Top with half the chicken and half the cheese. Repeat the layers with the rest of the chips, chicken, the beans and then the remaining cheese.

  4. Bake the nachos at 180c for 10 minutes.

  5. Remove from the oven and transfer to a plate.

  6. Top with the tomatoes, jalapeños, olives and sour cream. Serve with extra sour cream on the side. Serve immediately.
