I love fajitas! They have a kick from the spices, zing from the lime juice and great flavour from the homemade salsa. And this is a simple recipe for a busy evening, which has loads of vegetables stuffed into them. My kids eat them without any fuss at all and will intentionally pick out the vegetables and eat them before the fajitas are finished. You can find the salsa recipe here.

Serves 6
Ingredients
3 chicken breasts,
1 onion- cut into slices
1/2 a yellow pepper- in slices
1/2 an orange pepper- in slices
1/2 a green pepper- in slices
1/2 an onion- in slices
2 tablespoons Cajun spice (my homemade mix recipe is available)
Juice of half a lime
2 Tablespoons oil
Tortillas
Sour cream
Cheese
Salsa (use my homemade recipe! It's amazing)
Lettuce
Jalapeños
Other add-ons (tortilla chips, refried beans, etc)
Instructions
Cut the chicken into slices
Marinate the chicken in the cajun spices and a splash of lime juice. Marinate for a minimum of 2 hours.
Heat the 1 tablespoon oil in a pan, then add the chicken. Fry 2 minutes each side and remove from the pan.
In the same pan, heat 1 tablespoon oil and add the veg to it. The spices in the pan will get stuck to the bottom and will then coat the vegetables and give them so much flavour.
Flash fry the vegetables for 2 minutes. Add the chicken back to the pan and cook a couple minutes longer.
Remove the chicken and veg from the pan and put them in a serving dish.
Heat the tortillas on the stove, then get all the condiments ready on the side.
Fill your fajitas as desired. Get the kids to make their own, by adding their favourite toppings and then help them wrap it up.
Notes: Want to change things up a little? Why not use beef, or shrimp? You can change up the protein and add whatever you prefer.
