I love to cook dishes that I can throw together quickly like 20 minutes, especially on a busy day when I’m working on my other channel and don’t have much time to cook. This Chicken fajita pasta is perfect for a busy night.

Serves 4-6
Ingredients
8 oz/ 228 grams penne pasta- dried
1 tablespoon olive oil
1 medium onion- sliced
2 bell peppers- mixed colours- sliced
4 tablespoons fajita seasoning- divided- my recipe is here!
500 grams chicken breast- sliced
2 cup shredded cheese- divided
2 tablespoons tomato puree
1 cup heavy cream
Instructions
Cook pasta until al-dente. Drain and set the pasta aside. Reserve 1/2 cup pasta water for later.
Heat 1 teaspoon olive oil in a pan. Add the onions and peppers on medium heat. Add 1 tablespoon of the fajita seasoning. Cook on a medium heat for 5-6 minutes until the onions soften. Remove from the heat and place in a bowl.
In the same pan, place 1 teaspoon oil. Fry the chicken with 2 tablespoons fajita seasoning for 5-6 minutes until the colour changes. Add the peppers and onions back to the pan, along with the tomato puree and pasta, and water. Cook for 2-3 minutes.
Add the cream and half the cheese. Mix well.
Remove from heat and pour into a pyrex dish.
Top with the remaining cheese and grill for 2-3 minutes until bubbly and golden.
