We love snacks in this house! I make batches of make and freeze snacks so that my freezer is always stocked with homemade items for the kids. The kids are growing, which means unexpected bursts of hunger, then huge growth spurts. I love that they are always happy to eat food that I make for them at home, and don’t end up going out to find to find unhealthy snacks and food. They depend on what we have at home. Which makes me so happy.
These chicken croquettes are really popular when ramadan rolls round. I make like 100 in one go and freeze them so I don't have to work while I'm fasting. Work smarter, not harder, right?

Yields 2 dozen
Ingredients
2 tablespoons butter
1/4 cup flour
1 cup milk- warm
1/2 cup chicken stock
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano- optional
1/2 teaspoon paprika
1 cup shredded chicken
2 medium potatoes- boiled/ 1 cup mashed potato
1 cup shredded cheese
2 eggs- beaten
Salt and paper
Bread crumbs for coating
Instructions
Melt butter. Add the flour and whisk it through. Cook 2 minutes. Slowly add the warm milk and whisk it through. Add the stock and thicken the sauce.
Add the paprika, salt and pepper. Pour it into a bowl and cool to room temperature.
Add the chicken, potatoes and cheese. Mix well.
Shape into croquettes. Cover in flour, egg then breadcrumbs.
Freeze for 15 minutes.
Heat 1 inch oil in a shallow pan. Fry 5-6 croquettes at once for 5 minutes until crispy and golden.
Remove from the oil and blot on kitchen paper.
