Quick dinners are so popular amongst my readers and viewers. When I look through my search results, I see so many of you asking for easy dinner recipes, or quick dinner recipes. Because like me, you are all short on time after a long day, taking care of everything else. I love recipes that require that you marinate the meat for a while. It works well for me, because I’ll marinate the meat in the morning, get on with my day and by the evening, everything is prepped and ready to go.
These chicken breasts are served with a creamy mushroom sauce. Perfect with a side of mashed potatoes and vegetables of your choosing. The recipe can easily be doubled or trebled according to your needs.

Serves 4
Ingredients
2 chicken breasts (600 grams)
1/2 teaspoon salt
Black pepper
1/4 cup flour
1 tablespoon butter
Mushroom Sauce
2 tablespoon butter
300 grams mushrooms- thickly sliced
2 cloves garlic- minced
3/4 cup chicken stock
1 cup heavy cream
Instructions
Cut the chicken breasts horizontally. Sprinkle the chicken with salt and pepper.
Dust the chicken in flour.
Melt the butter in a large pan. Add the chicken and cook it on a high heat for 2 and a half minutes until golden and cooked through. Remove the chicken from the pan.
Cover the chicken and keep it warm.
Place the mushrooms in the pan, add the minced garlic and cook the mushrooms on a high heat until they soften and cooked through.
Deglaze the pan with the chicken stock. Cook it for 30-40 seconds. Add the cream and cook it for a further 2-3 minutes until reduced and thickened.
Taste and adjust the salt and pepper. Add the chicken back to the pan, Coat the chicken in the sauce and cook it for 2 minutes. Serve immediately.
