I love easy dinner recipes and these chicken and pineapple kebabs with teriyaki sauce were a huge hit in our house, especially with the kids. I wonder what it is with kids and food on skewers. They go nuts for kebabs. Just be careful with skewers, you don’t want the kids to get hurt. Serve these chicken and pineapple kebabs with teriyaki sauce, with some grilled vegetables and brown rice. Yum yum yum!

Serves 4
Ingredients
1 kg Chicken breasts- cubed
1 green pepper- chunks
1 onion- chunks
1/2 pineapple- in chunks
Teriyaki Sauce
1 cup soy sauce
1/2 cup water
1 tablespoon corn starch
1/2 teaspoon garlic paste
1/2 teaspoon ginger paste
1/2 cup brown sugar
2 tablespoons honey
1 teaspoon toasted sesame seeds
1 tablespoons oil- for frying
Instructions
Soak wooden skewers in some water for 30 minutes.
Thread the onion, chicken, pineapple and peppers onto the skewers. Set them aside.
Combine the sauce ingredients in a pan and thicken it on a low heat until it coats the back of a spoon. Take it off the heat and place evenly between 2 bowls.
Grill the chicken skewers and baste with half of the sauce.
Plate the chicken kebabs and garnish with toasted sesame seeds. Serve with the other half of the sauce atop some grilled vegetables and brown rice.
