Chewy Oreo Chocolate Chip Cookies

Recently I sent out some cookie boxes and everyone raved about these chewy Oreo chocolate chip cookies. To be honest, I didn’t really notice how amazing they were because I make them so often. But when people asked me for the recipe, I decided to show you all how I make them!
The best part of these Oreo chocolate chip cookies is that they are overloaded, thick and chewy, bursting with chocolate cookie flavour, then topped with a thick and rich ganache!

Preparation Time 10 minutes
Chill Time 1 hour- overnight
Bake Time 12 minutes
Yields 18
Ingredients
2/3 cup butter- softened
1/3 cup sugar
2/3 cup brown sugar
2 teaspoon vanilla
2 eggs- room temperature
1/4 teaspoon salt
1 teaspoon baking soda
2 cups flour
3 cups Oreo chunks
1 cup chocolate chips
Chocolate Ganache
1/2 cup chocolate chips
1/4 cup heavy cream
Topping
1/8 cup chocolate chips
1/8 cup Oreo chunks
Instructions
Beat the butter and sugars together for 3-4 minutes on a high speed until light and fluffy. Add the eggs and vanilla. Mix well until smooth.
Add the flour, baking soda and salt. Mix it in until almost combined. Fold in the chocolate chips and Oreo chunks until just combined. Do not over mix the batter.
Chill the dough for an hour or even better, overnight.
When ready to bake, preheat the oven to 180c. Line 2 baking sheets with parchment paper. Scoop the dough onto the cookie sheets, spacing them 2 inches apart.
Bake the cookies for 11-12 minutes. The edges will be golden but the cookies will still be slightly soft on the top. Once out of the oven, top the cookies with the additional chocolate chips and Oreo chunks. Set the cookies aside to cool completely.
For the chocolate ganache: mix the cream and chocolate chips together. Heat in the microwave at 30 second bursts until smooth. Fill the ganache in a piping bag.
Once the cookies are cooled to room temperature, pipe the ganache over the cookies. Allow the ganache to set before serving.
