Tea time is such a great time to catch up with my kids and husband before everyone gets busy with their own activities, like football, hang outs and homework. I want to make sure they eat something that tides them over until dinner time and this carrot and date cake was perfect for them.

Cook Time 35-40 minutes
Yields 1 loaf/ 12 slices
Ingredients
1 cup plus 1 tablespoon flour
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon ginger powder
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
3/4 cup oil
2 eggs
1 teaspoon vanilla
1/4 cup sour cream
1 cup grated carrots
3/4 cup chopped dates
Topping
1 teaspoon brown sugar
Instructions
Combine the flour, baking powder, cinnamon, ginger, nutmeg and salt in a bowl. Mix well and set it aside.
In another bowl, combine the oil, sugars, eggs and vanilla. Mix well until smooth.
Pour the wet ingredients into the dry ingredients. Fold them in. Once the dry ingredients are mixed in 90% of the way, add the sour cream and finish mixing it in.
Fold the carrots and dates into the batter.
Pour the batter into the prepared pan. Top the batter with 1 teaspoon brown sugar.
Bake the cake at 180c for 35-40 minutes.
