Salted caramel is amazing! I feel like it has such an amazing depth to it. I have my own recipe for salted caramel and I feel like it is better than anything you can buy at the shops. You can find the recipe here.
These Caramelitas are the perfect mix between oats, caramel and chocolate! So yummy and rich They are perfect with a cup of tea.

Yields 12
Ingredients
1/2 cup butter- softened
1/2 cup brown sugar- lightly packed
1/4 cup sugar
1 egg - room temperature
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon- optional
1 cup flour
1 cup oats
160 grams salted caramel
1 cup chocolate chips
Instructions
Preheat the oven to 180c. Line an 8 inch square baking pan with parchment paper. Set it aside.
Beat the butter and sugars together for 3-4 minutes until light and fluffy.
Add the egg and vanilla. Mix it all in.
Add the flour, its, baking soda and salt. Fold it all in until smooth.
Press 2/3 of the batter into the base of the pan. Top with the salted caramel, make sure you leave a 1 inch border around the edges. Top the caramel with chocolate chips.
Now top the chocolate chips with the remaining 1/3 of the batter. Smooth it over with a spatula.
Bake at 180c for 25- 28 minutes until golden.
Remove from the oven and cool it to room temperature before slicing.
