I love game time snacks. The kids will request snacks when it’s movie night, or when we have other kids over to our place. They love asking me to make new and exciting snacks for them, and who can say no to those little ones? :)

Serves 4-6
Ingredients
4 long potatoes - with skins
2 cups chicken breasts- cooked and shredded
1/2 onion- sliced
1 pickled jalapeno- chopped
2 spring onions- chopped
Salt and pepper- to taste
1 cup shredded cheese
1/2 cup buffalo sauce
2 tablespoons olive oil
Instructions
Preheat the oven to 180c. Rub the potatoes in the oil, salt and pepper.
Bake the potatoes until tender. Allow them to cool
Cut the potatoes in half horizontally. Scoop out the flesh of the potatoes and place them in bowl.
Add the chicken, jalapeños, onions, spring onions, 1/4 cup cheese, salt, pepper and the buffalo sauce. Mix well. Adjust and sauce and seasoning.
Scoop the mixture into the potato skins. Make sure you add lots of the filling an pile it high. It will reduce and fall as it bakes.
Top with cheese. Bake at 180c for 5 minutes until the cheese bubbles
Top with additional spring onions & jalapeños. Serve with ranch dressing.
