Bounty Bars are a favourite in our house. And I wanted to make a dessert that combined coconut and chocolate for dessert. These Bounty Brownies were a huge hit. I took them to my aunt’s house and as you can guess, she was a huge fan!

Cook Time 40 minutes
Yields 12- 16 brownies
Ingredients
Brownies Base
1 package Brownie mix- prepared as instructed on the box
Coconut Filling
6 oz cream cheese- room temperature
1/3 cup heavy cream
3 tablespoons sugar
1/2 teaspoon vanilla
2 cups shredded coconut
Ganache
1/3 cup heavy cream
1 cup chocolate chips
Shredded coconut- for topping
Instructions
Prepare and bake the brownie mix as instructed. Once baked, set it aside to cool completely.
Beat the cream to stiff peaks then set it aside.
In another clean bowl, mix the cream cheese, sugar and vanilla until just combined. Fold the whipped cream and coconut into the cream cheese mixture.
Spread the mixture over the cooled brownies. Chill 30 minutes
For the ganache: combine the heavy cream and chocolate in a bowl. Heat it in the microwave at 30 second bursts until melted.
Pour the ganache over the chilled cream cheese mixture.
Top with extra shredded coconut. Chill for 1 hour until the chocolate sets.
Slice the brownies into squares and serve.
