This recipe is just one of those amazing recipes that you try and experiment upon, and now you are addicted to it! Believe me when I say, they are even better than the original dynamite shrimp you get from PF Chang’s. And I will no longer wait impatiently till I go there again.

Serves 4
Ingredients
500 grams large prawns- shelled and deveined
3 tablespoons cornflour
2 cups all purpose flour
3 teaspoon garlic powder
2 teaspoon salt
1 1/2 teaspoon white pepper
3 tablespoons fish sauce
1 egg- whisked
Vegetable oil- for frying
Sauce
1 cup mayonnaise
1/2 cup sriracha sauce
1/2 cup Thai sweet chilli sauce
2 tablespoons honey
Instructions
Sauce: combine all the ingredients and set it aside.
Shrimp marinade: combine the shrimp, fish sauce and the egg. Mix well.
Lightly flour a plate. Set it aside.
In a shallow bowl, combine the flour, corn flour, salt, pepper and garlic powder. Mix well and set up the dredging station.
Use tongs to remove the shrimp from the egg then dip it into the flour. Then place it onto the floured plate. Continue with the rest of the shrimp.
Pour a thin layer of the oil in a pan. Cook the shrimp in batches for 2-3 minutes. Flip after 1.5 minutes. Remove from oil and drain on kitchen paper.
Pour out 1/3 of the sauce into another small bowl for dipping later.
Toss the shrimp into the rest of the sauce.
Arrange In a plate and sprinkle over some toasted sesame seeds and sliced green onions.
