Easy recipes are a requirement for all mums. We don't want to spend hours in the kitchen, then hours cleaning up, feeding the kids, ironing and all those other errands. I want to make at least one thing easier for mums. And that is cooking delicious and healthy dishes for your loved ones.
Beef and broccoli is so soft and tender. It looks like you spent forever making it but comes together in no time. I usually serve this with egg fried rice and crispy sesame chicken. I'm literally drooling now!

Serves 4
Ingredients
1 1/2 lb flank steak- cut into thin strips
1 egg
2 Tablespoons corn starch
1/4 cup vinegar
Salt and pepper- to taste
2 cloves garlic- minced
1 stalk green onion- sliced
1/4 teaspoon fresh ginger- minced
1 head of broccoli- blanched
1 small onion- cut into chunks and separated
For the sauce
1/3 cup soya sauce
2/3 cup beef stock
2 1/2 tablespoons brown sugar
2 teaspoons sesame oil
1/4 cup cold water
2 Tablespoons corn starch
Instructions
slice the beef paper thin against the grain.
In a bowl, combine the beef, egg, 1/4 teaspoon ginger, garlic, green onion, white pepper and salt to taste, and the vinegar. Mix well.
Add the corn starch and mix again. Marinate the meat in the refrigerator for 1 hour.
Blanche the broccoli in hot water for 30 seconds. Then place the broccoli in ice water to shock and stop the cooking process. Remove the broccoli from the ice water and set aside.
In a bowl, combine the soya sauce, beef stock and brown sugar.
Combine the corn starch and 1/4 cup cold water to make a slurry. Add this to the soya sauce mixture.
Heat 2 teaspoons oil in a skillet. Fry the meat off in the skillet until light brown. Do not move the meat too much. You want to fry it off, not boil it. Remove the meat from the pan and set aside.
In the same skillet, pour in the sauce ingredients and thicken on a medium heat.
Add the beef, onions and the broccoli. Give it a good mix and cook 2 minutes.
Serve with egg fried rice.
