Banana Muffins with a Crumble Topping

Banana bread is always a hit in my house. My kids love it, family and friends request it and during the holiday seasons I will send loaves of banana bread as delicious, warm, sweet gifts. And they are always happily received. Sometimes, I want to change it up. Which is why I will turn the 'banana bread' into 'banana muffins'. They make a great change to normal breakfast items and also, they look so cute in a basket to send to friends. They will be happily received.


This recipe is so easy and comes together in 3 steps. The streusel topping, dry ingredients and the wet ingredients. Super easy and a great recipe for kids to try out too. This can be one of those beginner recipes for them. Something they can do for themselves (just so long as they can read).









Preparation Time 5 minutes

Cook Time 20 minutes

Makes 6 Jumbo or 12 small muffins


Ingredients

Crumble Topping


1/2 cup flour

1/4 cup sugar

1 teaspoon cinnamon powder

4 tablespoons butter - room temperature


Banana Muffins


1 1/2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup sugar

1 egg- beaten

1/3 cup butter- melted

3 bananas- mashed










Instructions


  1. Preheat the oven to 180c. Line a muffin tray with paper cases. Or if you prefer, lightly grease the muffin tray.

  2. Prepare the crumble topping: Combine the flour, sugar and cinnamon together. mix well. Add the butter and mix until a crumble forms. Set aside.

  3. Prepare the muffins: Combine the flour, baking soda, baking powder, salt and sugar in a bowl. Mix well. Set aside.

  4. Prepare the wet ingredients: Mix the egg, melted butter and mashed bananas together.

  5. Fold the wet ingredients and dry ingredients together. Fold until just combined. Do not over mix. Some pockets of flour will still be visible. That's ok.

  6. Spoon the mixture equally into the muffin tray. Fill 3/4 of the way for normal muffins. For huge muffins fill them all the way to the top.

  7. Top with the crumble topping.

  8. Bake for 20 minutes until an inserted skewer comes out clean.

Serve with a large cup of tea! :)
