Brownies are love! And I am known for making the fudgiest brownies. Last week, I wanted to try something different. Something more along the lines of brownies you can find at the bakery. You know, the fudgy brownies with a layer of chocolate ganache on top, wrapped in clingfilm, ready for you to grab a piece and run. Ha!
These brownies are so easy to make and are delicious! The kids loved them and took pieces of them before I even had time to take a picture.

Serves 12
Ingredients
4 eggs
3/4 cup sugar
1 cup flour
1/4 cup + 3 tablespoons vegetable oil
1/4 cup cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon vanilla
50 grams chocolate- melted
Ganache
1/4 cup heavy cream
1/2 cup chocolate- chopped finely
Instructions
Preheat the oven to 180c. Line a 9 inch square tin with parchment paper. Set it aside.
Beat the eggs and sugar together for 8 minutes at a high speed until light and pale. The mixture would have doubled in size.
Slowly add the oil and vanilla. Beat it at the same time.
Sift in the flour, baking powder and cocoa powder. Fold in the dry ingredients until only a couple pockets of dry flour remain.
Add the melted chocolate and fold that in too.
Pour into the prepared tin. Level it off and bake for 30 minutes.
Remove from the oven and set it aside.
To make the ganache, combine the chocolate and the cream in a bowl. Heat in the microwave at 30 second intervals until melted and smooth.
While the brownies are still warm, pour the ganache over the top of the brownies and level off with an offset spatula.
Chill in the fridge for 2 hours.
Remove from the fridge, cut and serve.
