Asian Beef and Vegetable Soup

The winter months always call for warm and comforting food. We need to keep warm and this Asian Beef and Vegetable soup is one of the best soups out there. Its filled with flavourful beef, filling vegetables and a rich and delicious broth. You can't go wrong with this soup. Try it now.





Preparation Time 30 minutes

Cook Time 1 1/2 hours

Serves 6


Ingredients

500 grams Beef- cut into 1 inch strips

1 tablespoon oil

2 cup water

1 1/2 cup beef stock

1/4 cup soya sauce

6 green onions chopped

3 tablespoons brown sugar

2 cloves of garlic- minced

1 tablespoon ginger- minced

2 teaspoon sesame oil

1/4 teaspoon cayenne pepper

1 1/2 cups fresh mushrooms- sliced

1 1/2 cup carrots- julienne

1 cup sliced box chop

1 1/2 cup uncooked rice

Chives- to serve







Instructions

  1. Brown the meat in a large pot on all sides. Add the water, broth, soya sauce, onions, brown sugar, garlic, ginger, sesame oil and cayenne. Mix it well and bring it to a boil. Reduce the heat and cook it on a low heat for 1 and a half hours.

  2. Stir in the mushrooms, carrots and box chow. Cover and simmer for 20-30 minutes longer. The vegetables will be tender.

  3. Boil the rice separately until desired consistency.

  4. Divide the rice into 6 bowls. Top with 1 cup of soup. Garnish with chives.
