Easy recipes are always a winner in my book. And desserts are another. Which is why this Apple Tarte Tatin is such a great recipe to try. Serve warm with vanilla ice cream or single cream.

Ingredients
1 sheet puff pastry- thawed
1.5 kg apples
3 tablespoons water
1/2 cup sugar
3 tablespoons butter
1/2 teaspoon cinnamon
Vanilla ice cream- to serve
Instructions
Use a 9 inch cake pan to cut a little larger circle out of the puff pastry. You can use the leftover puff pastry for another recipe if you put it back in the fridge. Prick the puff pastry with a fork and chill the pastry until ready to use it.
Peel and quarter the apples. Remove their stems and cores.
Preheat the oven to 180c.
Combine the water and sugar in a large saucepan. Caramelise the sugar until it becomes a light amber colour. Add the butter and mix it in. Add the apples and mix it to coat the apples in the caramel. Cook the apples on a low heat for 10-15 minutes, stir continuously.
Arrange the apples in the bottom of the cake pan, curve of the apple at the bottom. The apples should be tightly packed together. Make sure the apples are pressed together compactly. Pour over the caramel.
Lay the puff pastry sheet over the apples and stuck the pastry in down the sides of the pan.
Bake at 180c for 40-45 minutes until it is puffed up and golden. Remove the tarte tatin from the oven and cool it down for 1 hour. Then flip it over onto a plate.
Serve with vanilla ice cream.
