I love apple pie, but it isn’t always convenient, because you can’t carry it around. But I finally figured out how to make Apple Pie more ‘portable’, in egg roll wrappers. Fill them, seal them and fry them until yummy and golden brown. They taste just like the apple pies from Mc Donalds. You will never want to live without a batch in your freezer!

Yields 12
Ingredients
3-4 apples- peeled, cored and cubed
2 tablespoons butter
1/2 teaspoon cinnamon
1/8 cup light brown sugar
12 egg roll wrappers
1 egg- whisked
Oil- for deep frying
Instructions
Melt butter in a large, deep pan, over a medium heat.
Add the apples, cinnamon and sugar. Mix well and adjust to preference.
Cook the apples on a low heat for 5-10 minutes until softened. Set it aside to cool to room temperature.
Fill egg rolls with 2 tablespoons filling. Fold and seal them shut with egg wash. Freeze them if you want to use them at a later date.
To fry, heat oil for deep frying to 170c. Fry the egg rolls for 3-4 minutes until golden.
Remove from the oil, blot on kitchen paper and top with icing sugar.
