This has been a hell of a week! I'm down with a cold, exhausted and just want to take a nice long nap. So making snacks for the kids has been a task! I had to come up with some healthy snack, which contained at least one vegetable. This recipe was fantastic. Came together in 5 minutes, and baked in the air fryer for less than 10 minutes; which is insane! I'll definitely be making these regularly, even when I'm not poorly.
Preparation Time: 5 minutes
Cook Time: 10 minutes
Serves: 4 - as a starter
Ingredients
1 Zucchini- grated
2 eggs
1 cup cheddar cheese- grated
1/4 cup panic breadcrumbs
1/4 cup breadcrumbs
3/4 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon garlic powder
Instructions
Grate the Zucchini. Place in a cheesecloth, tie up the ends and squeeze all the water out of the zucchini. Discard the water.
Combine the strained zucchini, eggs, both breadcrumbs, cheese, salt, pepper and garlic powder in bowl. Mix well.
Set the air fryer to 180c. Lightly brush the basket with oil.
Spoon tablespoons of the mixture onto the basket of the air fryer. Brush the tops with oil and bake for 10 minutes.
Serve with marinara sauce.
